  • 1 1/2 cups Arborio rice
  • 4 cups vegetable or chicken broth
  • 1/2 cup dry white wine (optional)
  • 2 cups fresh mixed mushrooms (such as shiitake, cremini, and oyster), sliced
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp unsalted butter
  • Salt and pepper, to taste
  • Fresh Rosemary, chopped (for garnish)
  • 1/4 cup Ritual Powders Mushroom Bomb Souper Mix


  1. In a saucepan, heat the vegetable or chicken broth over low-medium heat to maintain a gentle simmer, stir in the Ritual Powders Mushroom Bomb Souper Mix .
  2. In a separate large saucepan or deep skillet, heat 1 tbsp of olive oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent, about 3-4 minutes.

  3. Stir in the Arborio rice, and cook for 1-2 minutes until the rice is lightly toasted.

  4. If using, add the white wine and cook until absorbed, stirring constantly.

  5. Gradually add the warm broth to the rice, one cup at a time, stirring continuously and waiting until each cup is absorbed before adding the next. This process should take about 20-25 minutes.

  6. While the rice is cooking, heat the remaining 1 tbsp of olive oil in a separate pan. Sauté the fresh mixed mushrooms until they are tender and slightly browned.

  7. Once the Arborio rice has absorbed the broth and is cooked to an al dente texture, fold in the sautéed mushrooms, Parmesan cheese, and unsalted butter.

  8. Season the risotto with salt and pepper to taste.
