Ingredients
- 4-5 tablespoons of Hot + Spicy Curry Souper Mix
- 2 cups of hot water
- 1 small pumpkin, peeled, seeded, and diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp ground cinnamon
- Salt and black pepper to taste
- Fresh cilantro leaves and/ or pine nuts for garnish (optional)
Method
- In a large pot, heat olive oil over medium heat. Sauté onion and garlic for 3-4 minutes until fragrant.
- Add diced pumpkin, stirring to combine.
- Sprinkle with cumin, coriander, and cinnamon, coating the pumpkin with spices.
- Pour in hot water and bring to a boil.
- Reduce heat, cover, and simmer for 20-25 minutes until pumpkin is tender.
- Stir in Hot + Spicy Curry Souper Mix.
- Use an immersion blender or regular blender to purée the soup until smooth.
- Season with salt and pepper.
- Ladle into bowls, garnish with cilantro/ pine nuts (if desired), and serve hot.
